The following paper describes in detail pretty much everything there is to know about LaTeX, complete with example code, descriptions and sample document templates to be used immediately: tobi.oetiker.ch/lshort/lshort.pdf

Another source of information is the Wikibooks covering largely the same topics as the above paper but provides better navigation.

Finally, the official LaTeX page itself: http://www.latex-project.org/.

Another good resource is the book Introduktion til LaTeX (in danish).

The book is written by Lars Madsen for the Institute of Mathematics at Aarhus University, and covers almost all the parts of LaTeX you need to know for basic academic usage.

Also if you cant remember the code for a particular symbol http://detexify.kirelabs.org/classify.html is your friend.
